Phil Devito (1929-2011)
Oregon's Original Sommelier

Phil DeVito didn’t grow grapes or make wine. Instead he was one of Oregon’s original sommelier’s who helped grow the acceptance of Oregon wine with fine dining.

Before wine was popular in the 1960’s and 1970’s he offered his customers a glass of wine instead of a cocktail and helped walk them through the wine list. His skills and industry influence grew along with the growth of Oregon’s wine industry. In 1972 DeVito became the Maitre d’Hotel at Salishan Lodge. He retired from Salishan after 22 years.

Friends said he would remember each customer and represented a bygone era of elegant ladies and gentlemen who appreciated fine service.

He helped Salishan achieve “Wine Spectator’s Grand Award” in 1983.
